Sodexho testing 'trayless' dining

In an effort to reduce food waste and water usage, campus dining services provider Sodexo is testing the concept of dining without benefit of trays in the student dining hall, Garvey Commons, where 4,000-5,000 meals are served daily. On the first four test dates, the trayless approach on average reduced food waste by 650 pounds and water usage by 420 gallons.
After gathering student input, Sodexo will meet with representatives of the residence halls, student government and administration to discuss whether the concept should be a regular feature of Garvey Commons dining. St. Cloud State is the first university served by Sodexo in Minnesota where the concept is being introduced, but staff members are optimistic that their results could lead to similar efforts elsewhere.
