In 1978, the SCSU Alumni Association and Continuing Studies co-sponsored a Women’s Day that was coordinated by Tom Macgillivray and Dorothy Simpson. Excess money from the event helped establish this Non-Traditional Student Scholarship. Macgillivray and Simpson again teamed-up to sponsor alumni tours to SCSU's International Studies program in England—Alnwick Castle. During one of the trips, Macgillivray wrote a cookbook titled A Yankee in King Arthur’s Kitchen, which was based on her favorite recipes of those of the participants. Eventually, a press release was sent to the Minneapolis Star and Tribune, the cookbook was featured in the Sunday edition of the food section, and orders for were taken from six different states. Macgillivray donated money from the sales of all 600 cookbooks to establish this scholarship endowment.
